Mum's post: Baking with Amelie

Goes a little something like this:

So I'm making dinner late and I have a girl who really wants to help out, but nothing for her to do, so she offers to bake a cake.
Ok.
Get out the recipe, bowls, and basic ingredients.
She mashes bananas, pours, mixes, tastes and mixes more.
She is fabulous.


While the food is burning on the stove I want to record this fabulous moment.
"Smile Amelie!"
And here's what I get:
















Yup, that's her. Fantastic Amelie, super girl wonder and super hero helper.

Kari’s Fab Breakfast & Snack Banana Cake

1 cup mashed ripe banana (2-3 bananas)

¾ cups sugar

1 ¾ cups flour

½ tsp baking soda

¼ tsp salt

Pinch of ground nutmeg

1/3 cup vegetable oil

½ cup milk

2 eggs

1 tsp vanilla extract

½ cup chopped walnuts

In a small bowl mix bananas & sugar, let stand for 10 mins. While you’re waiting, Pre-heat oven, grease & flour baking tin.

In a large bowl mix oil, milk, eggs, & vanilla. Add banana mix.

Sift dry ingredients together into wet stuff. Mix until just combined.

Quickly stir in nuts.

Spread batter into pan and bake 40-60 mins at 180 C.

I double this recipe and bake in a bunt tin for 60 mins. Good luck.
